The gourmet restaurant Experience – A Journey Through Taste and History

At Bjerkem Farm in Henning, Steinkjer, you’ll find Experience – a unique gourmet restaurant offering an unforgettable evening of organic, locally sourced cuisine. The restaurant is housed in a former barn, beautifully transformed into a rustic yet atmospheric dining space and bar. Here, you will enjoy a 16-course tasting menu that evolves with the seasons, paired with carefully selected wine packages or non-alcoholic juice and cocktail pairings.

Behind this concept is owner and head chef Kim Tore Sjøbakk, who brings invaluable experience from Michelin-starred restaurants in London. At Experience, you don’t just enjoy a meal – you embark on an experience for life.

From the moment you arrive, you are transported 150 years back in time, to an era when food was grown and harvested for personal consumption. Kim’s philosophy is simple: the process of sourcing and gathering ingredients is just as important as the cooking itself – and deserves its own story. His goal is to give guests the true meaning of the word “experience”.

Local Ingredients – The Flavours of Trøndelag

Kim Tore uses organic and wild produce from Trøndelag, working closely with local farmers, fishermen, foragers, and hunters – as well as growing and foraging much himself. This ensures dishes of the highest quality, showcasing the very best the region has to offer.

Some of our trusted suppliers include:
Gullimunn – heritage grains such as Emmer wheat and Sweet Rye, grown on the farm and nearby.
Trøndersopp – organic and wild mushrooms from Leksdal, just 15 minutes away.
Bjørka – honey from Marie Vorum, who also helps source other local products.
Kim personally handpicks many of the ingredients that later become exquisite dishes.

An Unforgettable Culinary Evening

We serve a 16-course tasting menu, carefully designed to provide a wealth of flavours without leaving you overfull. You can also choose from a range of drink pairings – with or without alcohol – tailored to complement each menu.
The bar opens as guests arrive, and service begins at 7:30 PM, with dishes thoughtfully paced throughout the evening.
