Sabrosos gigantes
El cangrejo real es relativamente nuevo en Noruega, ya que se capturó por primera vez en 1977. Por aquel entonces, en Noruega se conocía como cangrejo de Kamchatka, en honor a la península situada en la costa oriental de Siberia.
El cangrejo real que en la actualidad vive fuera de Noruega procede del fiordo de Múrmansk, donde biólogos soviéticos lo liberaron en los años 60. Desde entonces, la población se ha extendido al Norte de Noruega y ha encontrado el hábitat ideal en estas aguas frías.
«Existen más de cien especies de cangrejo real. El rojo es la segunda especie más grande y también una de las que más se suelen comer», afirma Michael, guía de safaris del cangrejo real en Snowhotel Kirkenes.
La carne del cangrejo real es dulce y aromática y suele compararse con la de la langosta. Según Michael, la parte más sabrosa es el hombro.
«El músculo del hombro es el filete del cangrejo real. Es la carne más tierna de esta criatura», explica Michael.
